Easy Broccoli Salad
Ingredients
- 1 pound fresh broccoli (chopped into small florets)
- 1 red onion (chopped)
- 8 strips bacon (cooked crisp and crumbled)
- 1/2 cup sunflower seeds
- 3/4 cup Craisins
Dressing
- 1/2 cup light mayo
- 1/2 cup plain greek yogurt
- 2 tablespoons red wine vinegar
- 1/2 cup sugar
- 1/2 teaspoon salt
Instructions
In a large bowl combine broccoli, onion, bacon, sunflower seeds, and Craisins.
Toss in the salad dressing and refrigerate for 30 minutes or until serving.
Salad Dressing:
Mix the mayonnaise, red wine vinegar, sugar, and salt together. Stir until the sugar begins to dissolve.
Pour dressing over broccoli salad and stir to coat.
Notes
*Allowing this recipe to set up in the fridge for 30+ minutes is recommended but not required. The flavors will incorporate better if you do.
