Stuffed Peaches

Stuffed Peaches
3 lg. ripe peaches, each cut in half and pitted
1 Tablespoon butter
1 Tablespoon brown sugar
1 egg, beaten (only use 1/4 teaspoon)
1 1/2 cup coarsely chopped Bordeaux cookies
1/2 teaspoon vanilla
1-2 Tablespoons quick oatmeal
1 Tablespoon finely chopped natural almonds

1. Preheat oven to 350’F. Scoop out and reserve half of flesh from peach half.

2. Grease shallow dish or ceramic baking dish with butter. Place peaches, hollow side up, in dish.

3. Chop reserved peach flesh. Blend 1 tablespoon butter, 1 tablespoon brown sugar and add to peach flesh. Stir in egg, vanilla, oatmeal and crushed cookies. Spoon evenly into peach halves.

4. Sprinkle peaches with crushed cookies, almonds and cinnamon.
Bake 15-20 minutes or until peaches are softened and topping is browned. Serve with whipped cream.
