½ cup fresh orange juice
1 tablespoon soy sauce
2 tablespoons brown sugar
1 tablespoon butter
½ teaspoon fresh basil, chopped
2 cups yams, peeled and diced into 1-inch cubes
1 tablespoon soft butter
pinch of cinnamon and nutmeg
salt and freshly cracked black pepper to taste
2 6-8 ounce salmon filets
salt and pepper to taste
In a sauté pan over medium-high heat, cook the orange juice until the volume is reduced by one-half. Add the soy sauce and brown sugar and cook for one minute. Add the butter and basil and cook just until the butter is melted (do not allow the butter to boil). Set the sauce aside
Cook the yams in salted water to cover for 25 minutes, or until fork-tender. Remove from heat and drain. Mix the 1 tablespoon of soft butter with the cinnamon, nutmeg, salt and freshly cracked black pepper, and spoon over the yams.
Season the filets with salt and pepper to taste, and pan sear or broil for 3-4 minutes on each side.
