Toasted Sara Lee and Hillshire Ham and Brie
4 slices Sara Lee bread

2 Tablespoons butter or margarine, softened

12 slices Hillshire Farm Deli Select Ultra Thin Honey Ham

2 ounces brie, cut into slices

1/2 cup red onion marmalade (recipe follows)

Heat a large, heavy skillet over medium heat. Meanwhile, butter one side of each slice of bread with 1/2 Tablespoon butter.

Lay two slices of bread, butter side down into the skillet. Top each with six slices ham, 1 ounce brie and 1/4 cup red onion marmalade. Top with remaining bread, butter side up.

Cook 5 minutes, until underside of sandwiches are toasty and golden. Flip over and cook an additional 5 minutes until sandwiches are toasty on both sides, and cheese is melting.

Red Onion Marmalade
1 1/2 lbs red onions

3 tablespoons unsalted butter

1/4 cup sugar

1/4 cup balsamic vinegar

1/4 teaspoon salt (to taste)

Halve onions lengthwise and cut into thin slices, using a chef’s knife or a mandolin.

Heat butter in large heavy skillet set over medium heat. When melted and hot, add onions and sugar and stir well. Turn heat to medium low. Cook, stirring occasionally, until onions are soft and start to caramelize, 25-30 minutes.

Add vinegar and turn heat to high. Stir until mixture comes to a boil.

Reduce heat and simmer until liquids have evaporated and onion is shiny, 5 to 10 minutes.

Remove from heat and sprinkle in salt, adding more if needed. For tarter taste, stir in another 2 to 3 teaspoons vinegar.
