Triple Melon Salad with Creamy Orange Poppy Seed Dressing
2 cups Watermelon, cut into cubes or balls
2 cups Cantaloupe, cut into cubes or balls
2 cups Honeydew, cut into cubes or balls
Fresh mint leaves
Dressing:
1/3 cup Vanilla yogurt
3 tbsp Brown Sugar
2 tbsp fresh orange juice
½ tsp orange zest
¼ tsp poppy seeds
Whisk yogurt, brown sugar and orange juice together;
Stir in orange zest and poppy seeds.
To Serve:
Place melon on a bed of arranged mint leaves.
Drizzle with dressing
