3-A-Day Yogurt Flapjacks


4 cups nonfat or low fat vanilla yogurt
1/4 cup maple syrup
1 egg
1 1/2 cups pancake mix
2 cups chopped fresh fruit (strawberries, grapes, blueberries, peaches, etc)


Combine 1 1/2 cups yogurt with maple syrup. Set aside.

Combine remaining 1 1/2 cups yogurt and egg; beat well. Add pancake mix and blend just to combine. Spray griddle with non-stick spray. Spoon 1/4 cup batter on hot griddle and gently spread out. Cook until edges are firm, flip and brown opposite side. Serve warm with chopped fruit and maple yogurt sauce. Serves 4.

Corn Fritter Variation

Stir 1 can (15 oz.) well drained, whole kernel corn to into batter. Cook as above. Serve corn fritters plain as a vegetable side dish or create a Mexicalli cake by serving it with refried beans, salsa, and reduced fat shredded cheese.
