Viewers’ Peanut Butter Fix

Viewers shared their favorite peanut butter dishes in honor of National Peanut Butter Lovers Day.

“Peanut Butter & Co is my favorite brand of peanut butter; they have more than just smooth or crunchy. My favorites in order are Dark Chocolate Dreams, great on celery for a snack. Second is The Heat Is On, mixed with canned chicken on whole wheat wrap is almost as good as a Thai Satay. Third is Crunch Time, this is great on wheat bread with dill pickles. Fourth is White Chocolate Wonderful, this is great swirled in brownies. They have more flavors, Smooth Operator, also good in brownies and Cinnamon Raisin Swirl good on toast. I also have their cookbook with lots of recipes, only a few that I have tried. The bad part is I no longer can find it locally, but it is available online at their website Peanut Butter & Co.”

“My family’s favorite Peanut Butter Treat is stuffed French toast. We spread a generous amount of PB between two pieces of bread, then dip the PB sandwich in the French Toast Egg mixture and cook as you would a single piece of bread. The Peanut Butter melts in the middle for tons of ooey gooey fun!! Top with syrup and/or powdered sugar and there you go. For more fun you can make a Peanut Butter and Banana sandwich or a simple PB&J. Delicious!!”

“My husband has recently found a new peanut butter love. He is totally obsessed with Smucker’s Goobers…you know the jar of peanut butter and jelly in stripes. He loves the strawberry flavor and lately he has been upset because wherever we go grocery shopping he can only find the grape flavor. He will eat it out of a jar with one of my daughter’s baby spoons. He has a precise way of eating it too (he reminds me of this quite often)….he scrapes in a circular pattern so that it doesn’t get all mixed up. It is so funny. He is seriously like a little kid when it comes to this. He even has a hard time sharing with our 2 year old. It is pretty funny. So just buying him Strawberry Goobers will make his day!! =)”

“My family loves Chocolate Peanut Butter No Bake Cookies. They are absolutely wonderful. I justify the butter, sugar, peanut butter and chocolate with the fact that they have 3 whole cups of oatmeal! So, they are really WHOLE GRAIN cookies. It makes me feel better knowing I’m eating healthy while getting my peanut butter chocolate fix!”

“When my kids where little we didn’t have much money to spare for treats. I was on the wic program and we received peanut butter and cheerios as part of the food. I took a recipe for yummy bars and made it with cheerios instead of rice krispies. My kids loved them and named them cheerio squares. Even now when they come home they ask for cheerio squares. It is a favorite treat for my kids and grand kids.”

“My Grandma Mamie made the BEST homemade Peanut Butter Fudge…and not the microwave kind! The real melt in your mouth, chocolate/peanut butter fudge! YUMMIE!
Start with 4 cups of sugar
1 cup heavy whiping cream
1 cup milk
3 Tbs Karo
2 heaping Tbs Coco powder

Combine coco and sugar first in pan (mix) then add all other ingredients and let boil until it form a ball (a spoon full into cold water) Dump onto counter or marble slab let cool for 1 hour when it sets up add 3 Heaping Tbs Peanut butter and start whipping together with spachula form into log and enjoy! I was just informed that my Grandma Mamie’s recipe that I entered into the world wide ward cookbook will be in the next cookbook. (moms best recipe cookbook) My Grandmother was taken away from us early, but I know that she is smiling down from Heaven knowing that her recipe is in a worldwide cookbook!”

“My favorite peanut butter indulgence is rice crispy square with chocolate peanut butter on top! yummmm! However…. my oldest son is deathly ALLERGIC to peanuts… (becoming more and more common in U.S…. side note: the American Academy of Pediatrics recommends not giving your child nut products until after age 3! just about every 1 yr old in US eats a PBJ sandwich at 2…) Anyhoo…. allergy in our family… so peanut butter is a no go in our home…. SOLUTION? Harmons carries a great soy butter in their health food section called I.M Healthy Soynut butter…. SO GOOD! We love it (interestingly enough our son with allergy does not like it…) but the rest of us love it and are happy there is an alternative that we can enjoy and know that this great kid of ours is safe and healthy with I.M. Healthy in our cupboard!”
