2 tablespoons fresh garlic, crushed
1 tomato, diced
1 tablespoon fresh basil, chopped
1/4 cup broccoli florets, blanched
1/3 cup olive oil
2 cups cooked angel hair pasta
salt and pepper to taste
fresh parsley, chopped, for garnish
grated parmesan cheese to taste
In a heavy sauce pan over medium-high heat, combine 1/2 of the olive oil with
the crushed garlic. Heat until hot, but not smoking, being careful not to
burn. Add the diced tomato and cooked broccoli and cook for one minute. Add
the rest of the olive oil, fresh basil, hot pasta and salt and pepper to taste.
Toss in the pan and serve. Top with fresh chopped parsley and grated
parmesan.
