Avocado Lime Salmon Topped With Fresh Pico de Gallo

A fresh avocado lime salmon is perfect for a hot summer day.

After the fish is cooked, she tops it with a homemade fresh avocado Pico topping that gives each taste a fresh bite! It adds so much flavor to an already delectable fish.

Avocado Lime Salmon

INGREDIENTS

  • 4 salmon filets
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • 1/2 tsp ancho chili powder
  • 1 tsp freshly ground black pepper

For the avocado salsa

  • 1 avocado, sliced
  • 1/2 small red onion, sliced
  • 2 roma tomatoes, diced
  • Juice from 2 limes
  • ½ bunch finely chopped cilantro
  • Salt to taste

METHOD

  1. Preheat your oven to 415 F. Line a baking sheet with parchment paper.
  2. Mix the salt, cumin, paprika, onion and garlic powders, ancho chili powder, and black
  3. pepper together. Rub the salmon filets with olive oil and seasoning mix.
  4. Cook the salmon in the oven for 15-20 minutes, or until light and flaky but not dry!
  5. Combine the avocado, onion, tomato, cilantro, lime juice, and salt in a bowl and mix well,
  6. chill until ready to use.
  7. Top salmon with avocado salsa and enjoy.

** You can also get fresh pico de gallo from your grocery store and add a diced avocado for a semi-homemade version!
