Dressing Ingredients
¼ cup balsamic vinegar, preferably aged at least 18 months
2 tablespoons Gorgonzola cheese
1 tablespoon Parmesan cheese, grated
1 tablespoon red wine vinegar
½ teaspoon fresh cracked black pepper
2 tablespoons mayonnaise
3 tablespoons extra virgin olive oil
Combine together the first 6 ingredients. Then add the olive oil very slowly.
Salad Ingredients
4 cups romaine, diced
4 pieces thick bacon, cooked, chilled, chopped
1 ripe avocado, pitted, seeded, chopped
¼ cup bay shrimp
½ cup chicken, cooked and diced
½ cup tomato, diced
¼ cup Gorgonzola cheese
2 hard boiled eggs, whites and yokes separated and chopped
Toss the romaine with the dressing and spoon onto on two chilled serving plates. Divide the remaining ingredients and then arrange each ingredient in a line placed over the romaine.
