Baked Doughnuts

A new twist on an old favorite, doughnuts that are baked, not fried.
Baked Doughnuts
Bread Dough (You can make your own or use store bought dough-my favorite recipe is
listed below)
1/4 C. melted butter
1/3 C. sugar
1 t. cinnamon

Roll dough to a 1/2 inch thick rectangle. Cut the dough horizontally in half. Then cut
dough into 1 1/2 inch slices horizontally. Taking two strips of dough twist together by
pinching tips of strips together and twisting. Pinch ends together. Place on greased baking
sheet and bake in preheated 350 oven for 10-12 minutes. While the doughnuts are baking,
melt butter and combine the sugar and cinnamon into a separate bowl. After the
doughnuts are done baking, quickly dip in butter and then cinnamon sugar mixture. Eat
warm!
Dough for Baked Doughnuts
1 C. butter (or bean puree for even less calories and more protein and fiber!)
1 C. boiling water
1 C. water
2 T. yeast
3/4 C. sugar
2 eggs (or 2 T. dry egg powder + NO WATER)
5-6 C. flour (I like to use half whole wheat and half bread flour)
1 t. baking powder
1 t. salt

Combine butter and boiling water. Put in microwave to boil water about 3 minutes. (If
you’re using the bean puree instead of butter, simply add your yeast to the warm 2
combined cups of water and the bean puree later) Put in 1 C. tap water to help cool water
and butter mixture. Add 3/4 C. sugar and 2 T. yeast. Mix until blended and wait 3 minutes
until foaming. Add eggs (or egg powder) and mix. Add remaining dry ingredients (flour,
baking powder and salt) Knead until blended. Let double for about an hour in a warm place.
