Barbecue Lobster Bake


2 four ounce lobster tails, split, with meat pulled out of shell about ¾ of the way
2 ears of corn
4 baby red potatoes, cooked
1 four ounce sausage
4 clams
4 mussels


Blanch sausage and corn together lightly salted water for 3 minutes.

Place all of the above ingredients on the barbecue and grill for 3 minutes per side. Note: clams and mussels do not need to be turned, but must be cooked until shells open.

Butter Sauce Ingredients:

  • ½ stick butter, softened
  • 2 tablespoons fresh parsley, chopped
  • juice of one lemon
  • 1 tablespoon red onion, fine chopped
  • dash of Tabasco sauce
  • pinch of cracked black pepper
  • pinch of salt

    Method: Combine all the above ingredients together. Place hot seafood, sausage and vegetables in a bowl, add butter sauce mixture and toss until incorporated. Serves two.
