Beef & Bok Choy Fried Rice

Beef & Bok Choy Fried Rice
2 tbsp. toasted sesame oil
2 tbsp. finely chopped peeled fresh ginger
2 large shallots
1/4 tsp. Kosher salt
1 lb. beef flank steak, cut into bite-size pieces
1 1/2 c. thinly sliced bell pepper
1/2 c. chopped celery
1/4 c. lower-sodium soy sauce
2 tbsp. rice vinegar
2 1/2 c. cooked rice
8 c. thinly sliced boy choy

1. In a deep 12″ skillet, heat sesame oil and ginger on medium-high. Add shallots. Cook 1 to 3 minutes or until golden, stirring. Add salt and steak. Cook 3 minutes or until browned. Transfer to plate.



2. Reduce heat to medium. Into skillet, stir bell pepper and celery. Cook 3 to 5 minutes.



3.In a small bowl, whisk soy sauce and rice vinegar; stir into skillet along with browned steak, cooked rice, and bok choy.



4.Cook 5 minutes or until veggies are softened and proteins are cooked, stirring and scraping.
