Beefy Skillet Dinner

You don’t have to toss out favorite recipes like this Beefy Skillet Supper in order to accomplish your new year’s goal to eat healthier.



Becky Low shares a few principles you can apply to any recipe.

Beefy Skillet Dinner
2 cups cooked rice, enriched white or brown rice
1 small carton (6 oz) plain yogurt (or sour cream)
1-3 teaspoons hot sauce, more or less to taste
1-4 tablespoons chopped fresh cilantro
1 ½ pounds sweet potatoes (about 4 cups diced)
1 medium onion, chopped
2 tablespoons taco seasoning, more or less to taste
1 tablespoon oil
1 pound lean cooked beef


Cook rice according to package directions. Stir together yogurt and hot sauce, set aside. Chop cilantro, set aside.



Peel and dice sweet potato into ½-inch cubes; combine with chopped onion, taco seasoning and ⅓-cup water in a 12-inch skillet with a lid. Cover and cook over medium heat 8-10 minutes or until sweet potatoes are crisp tender and water has almost evaporated. Remove lid, add oil and continue to cook (without lid) until potatoes are tender and begin to brown – stir occasionally.



Shred or dice beef into bite size pieces. Add to sweet potatoes and continue to cook, covered, 4-6 minutes longer or until beef is heated through (as needed, add additional water to prevent scorching). Serve over cooked rice with yogurt sauce.

Recipe is an adaptation of “Beefy Sweet Potato Hash” from Our All-Time Favorites by National Cattlemen’s Association. To make a healthy meal, include bowl of fresh mango chunks, or other fruit of choice, a glass of milk. Recipe serves 6
