Black and Blue Ahi Tuna with Orange-Soy Sauce

Ahi Tuna:
1 cup Cajun spice
1 8-ounce ahi tuna filets

Dust the tuna lightly with Cajun spice on both sides. Scar the tuna on a very hot grill or in a saute pan for 2 min. on each side.
Orange-Soy Sauce:
1 cup soy sauce
1 cup fresh squeezed orange juice
1/4 cup orange zest, finely chopped
2 Tbl. cornstarch

Bring orange juice, soy sauce, and orange zest to a low boil. Simmer 5 min. Mix 2 Tbl. of the soy sauce mixture with the Tbl. of cornstarch. Whisk the cornstarch into the soy sauce mixture and simmer 5 min.

To Serve:

Put filets on warm plates and pour 2 ounces of sauce over each.

Serve with fresh seasonal vegetables and rice or potatoes.
