Black Pepper Ahi Tuna With Orange Teriyaki Sauce

Tuna Filets
2 six-ounce Ahi tuna filets
1 tablespoon fresh cracked black pepper
1 pinch salt
1 tablespoon olive oil

Coat tuna with salt and pepper. Add olive oil to a heavy sauté pan and cook tuna
over medium-high heat for two minutes per side for medium rare tuna or four to five
minutes per side for well done. Remove from pan and set aside.

2 cups cooked angel hair pasta
½ cup zucchini, cut in match sticks
½ cup yellow squash, cut in match sticks
½ cup carrots, cut in match sticks
1/3 cups teriyaki sauce
¼ cup fresh orange juice
1 teaspoon orange zest
1 tablespoon fresh parsley, chopped

In the same pan, add the vegetables. Cook for one minute. Add the pasta, teriyaki
sauce and orange juice and cook for one additional minute. Add the orange zest and
parsley to the pasta. Divide pasta into two portions. Slice tuna and place on top of
pasta. Serve immediately.
