Blackened Halibut


2 4 to 5 ounce fresh halibut filets
2 tablespoons blackening spice
2 tablespoons vegetable oil


Method for Cooking Halibut:

Place oil in a medium sauté pan over medium high heat and bring to temperature. Dust halibut with blackening spice and for cook 3 – 4 minutes per side.

Sandwich Ingredients:

  • 2 slices cheddar cheese
  • lettuce
  • tomato, sliced
  • sourdough bun, toasted
  • Market Street tartar sauce

    Method for Sandwich:

    Place halibut filets on toasted sourdough and spread with Market Street tartar sauce. Layer with cheese, lettuce and tomato to taste.

    Salad Ingredients:

  • ½ cup tomatoes, diced
  • 4 cups lettuce greens
  • ¼ cup frozen corn, thawed
  • ¼ cup feta cheese, crumbled
  • 2 tablespoons red onions, chopped
  • ¼ cup asparagus, julienned

    Salad Dressing Ingredients:

  • 2 tablespoons red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • pinch black pepper
  • 1 shallot, chopped
  • ½ tablespoon fresh parsley, chopped
  • juice of ½ lemon
  • pinch of salt

    Method for Salad:

    Thoroughly mix salad dressing ingredients together. Toss with salad ingredients, place on two chilled salad plates and top with halibut filets.

    Market Street Tartar Sauce

    Serves six

    Ingredients:

  • 1 cup mayonnaise
  • 2 tablespoons dill pickle or dill relish, minced
  • 2 tablespoons onion, minced
  • 1 tablespoon parsley, chopped
  • 1 tablespoon capers, chopped
  • 2 tablespoons caper juice
  • juice of ½ medium lemon
  • ¼ teaspoon white pepper
  • ¼ teaspoon salt
  • one ounce buttermilk

    Method: Combine all ingredients and refrigerate 30 minutes.
