Blueberry Panna Cotta


2 cups whipping cream
1 tablespoon plain gelatin
juice of 1 orange
zest of 1/2 orange
1/3 cup sugar
1/2 vanilla bean, split
1/4 cup whipping cream
1/2 cup blueberries


Combine the 2 cups of whipping cream with the gelatin. Set aside for approximately 15 minutes to allow the gelatin to soften.

Place the orange juice, orange zest, sugar, vanilla bean, and 1/4 cup of whipping cream into a medium sized saucepan and bring to a boil. Stir in the gelatin-whipping cream mixture and mix vigorously with a wire whip. Remove the vanilla bean.

Apply a light coat of non-stick spray to the inside of an 8-ounce bowl. Add the blueberries and the hot cream mixture. Cool in the refrigerator for 6-8 hours.

Serve with your favorite fresh blueberry sauce.
