Bran Apple Bread w/Cheddar


1 cup raisins
1/2 cup boiling water
2 cups flour
1 cup brown sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 teaspoons baking powder
1 cup bran flakes
1/4 cup butter, melted
2 eggs
3/4 cup milk
1 cup shredded apples (about 2 small, peeled, cored)
cheddar cheese


Pre-heat oven to 350 F

Pour boiling water over raisins and allow to stand while preparing other ingredients.

Combine flour, brown sugar, salt, soda, cinnamon, nutmeg and baking powder. Stir to mix. Stir in bran flakes.

Beat eggs, stir in butter, milk, apples and raisins and water. Add to dry ingredients and stir just until moist. Pour batter into a greased 81/2 x 4 1/2x 2 1/2 inch loaf pan (1 1/2 quart size). Bake for 60 minutes or until a tooth pick inserted in center comes out clean. Allow to cool 10 minutes before removing from pan. Cool on wire rack. Slice, serve with a slice of cheese melted on top.
