Broiled Garlic Prawns
one pound large shell-on shrimp
salt and pepper to taste
Cut the shrimp shells open down the back and pull the shrimp meat out of the shell halfway. Brush the shrimp with Garlic Butter and salt and pepper to taste. Place the shrimp, meat side down, on the barbecue and cook for approximately 90 seconds. Turn the shrimp over, brushing again with the Garlic Butter, and cook for one minute.
Serve with additional Garlic Butter as a dipping sauce.
Garlic Butter
2 tablespoons garlic, crushed
4 ounces butter
2 teaspoons cilantro, chopped
juice of one lime
Heat the butter, being careful to not boil. Add the garlic. Turn off the heat, leaving the pan on the burner for 2-3 minutes. This allows the taste of the garlic to transfer from pungent to sweet. Add the cilantro and lime juice and stir ingredients together.
Note: Preparing the Garlic Butter a day prior to serving will allow the flavors to marry.
