Broiled Vegetables and Salmon Pasta


1 small carrot, cut in small coin-size pieces
1 small zucchini, cut in coin-size pieces
1 small red pepper, seeded and cut in strips
1 small green pepper, seeded and cut in strips
1 8-ounce salmon filet
1/4 cup black olives, chopped or rings
2 green onions, whole
4 cups cooked shell pasta
2 tablespoons fresh basil, chopped
2 tablespoons parsley, chopped
4 tablespoons olive oil
2 tablespoons red wine vinegar
2 tablespoons capers, chopped, with juice
1/2 teaspoon cracked black pepper
pinch of salt


Brush the carrots, zucchini, red and green peppers and green onions with olive oil. Season the vegetables and the salmon with salt and pepper. Over medium-high heat on the barbecue grill, cook the vegetables for 90 seconds per side and the salmon for 3 minutes per side.

Remove from grill and combine vegetables and salmon with remaining ingredients and serve.
