Candied Pecan-Apple Salad


2 egg whites
3 tablespoons brown sugar
½ cup pecan halves
2 cups mixed baby greens
1 green apple, cored and diced
2 tablespoons Gorgonzola cheese


Mix the egg whites and brown sugar together until well-blended. Add the pecans. Transfer the coated pecans to a lightly greased baking sheet using a slotted spoon, allowing any excess liquid to drain off of the pecans. Bake at 300 degrees for 10-12 minutes, or until the pecans are golden brown. Remove from oven and let the pecans cool on the baking sheet for 15 minutes.
Dressing
2 tablespoons Balsamic vinegar
2 tablespoons extra virgin olive oil
juice of one lemon
pinch oregano
¼ teaspoon freshly cracked black pepper
pinch of salt


Mix all ingredients together.
