This Savory Caprese Chicken Layers on the Fresh Summer Flavors

Fresh ingredients make this caprese chicken extra delicious.

A few fresh tomatoes, a slice of mozzarella, and a delicious drizzle of homemade balsamic glaze – this recipe is the perfect way to perk up a simple chicken breast.

Our friend Chef Nettie Frank says caprese chicken showcases the best of summer flavors. Fresh ingredients make all the difference with this recipe. Reach for fresh tomatoes, fresh mozzarella, and fresh herbs to take it over the top. Nettie shared how to make your own balsamic glaze at home with the magic of reduction.

Caprese Chicken

  • Pesto
  • Chicken breasts or tenders
  • Sliced tomatoes
  • Mozzarella

  1. Cook chicken breasts or tenders.
  2. Layer with pesto, sliced tomatoes, and mozzarella to top.

Homemade Balsamic Glaze

  1. Start with a good-quality balsamic vinegar. In a saucepan over medium heat, mix 1 cup of balsamic vinegar with ¼ cup of brown sugar, or your sweetener of choice. Whisk until the sugar dissolves.
  2. Bring the mixture to a boil, then reduce the heat to low and simmer for about 20 minutes. The glaze should reduce by about half and coat the back of a spoon.
  3. Let it cool, then pour it into a lidded jar and seal. Store in fridge.
