Caputo’s Greek Turkey Dressing


2 T olive oil
2 lbs lean ground chuck
5 links breakfast sausage (broken up)
2 yellow onions (grated)
2 cups rice, cooked
3-4 celery stalks (diced & boiled)
1 c. pinenuts
3/4 walnuts (coarsely chopped)
1 c. chestnuts (boiled or roasted & coarsely chopped)
1 c. white raisins and/or currants
1 1/2 cups wine (dry red or white)
1/2 cup Metaxa or brandy
nutmeg to taste
salt to taste
pepper to taste


Heat oil in large skillet, add ground chuck and sausage, brown meats. Drain all the fat that has accumulated in the pan, then simmer meat and onions for about 10 more minutes. Add remaining ingredients & season to taste. Simmer 10 additional minutes.
You may either stuff your turkey or serve as side dish.
