Caputo’s Halibut with Basil Tomato Sauce


1/4 lb. butter
1 shallot
4 4oz. halibut fillets
2 cups tomatoes – diced
2 Tbs. fresh basil – chopped
1 clove garlic – minced
2 cups white wine
1/4 cup butter
salt and pepper to taste


In skillet add butter, cook over low heat until melted. Add halibut shallots, garlic; cook on each side for 2-3 minutes. Remove halibut. add tomatoes, basil, white wine 1/4 cup butter and salt and pepper cook until sauce thickens. Pour over halibut, garnish with lemon. Serve.
