Caputo’s Mascarpone Sauce

1/2 pint whipping cream
4 egg yolks*
6 T. sugar
8 oz. mascarpone cheese
2 T. Marsala wine

In a bowl whip cream until stiff. In a separate bowl beat egg yolks and sugar until thick and lemon colored, 4 to 5 minutes. Blend mascarpone and egg mixture until well mixed. Fold in whipped cream and Marsala wine. Serve over panettone, pandoro, sweet ravioli or other desserts.

*Egg yolks may be eliminated, just add the sugar to the whipped cream when it is stiff.
