4 jalapeno chile peppers, roasted and peeled
8 cloves garlic, peeled and chopped
1/4 cup orange juice
3 T lime juice
1/2 cup fresh cliantro, chopped
1 T ground cumin
1 T dried oregano
2 t salt
1/3 cup olive oil
1 T honey
4 Cornish game hens, washed well
Place all ingredients except Cornish game hens in a blender and process until fairly smooth. Place the game hens in a large zip lock bag, cover with marinade, seal well and refrigerate overnight, shaking occassionally. Return to room temperature for 1 hour before cooking.
Preheat oven or grill to about 375 degrees. Remove the birds from the bag and butterfly by splitting in half along back bone. Open bird flat out and press down on breast to flatten. Place birds on the grill for about 15 minutes on each side, basting occasionally. If cooking in oven bake for about 40 minuites, basting occasionally. Test for doneness and remove to a platter. Serve with mango or other fruit salsa.
