Caputo’s Pasta with Fresh Anchovies

1 lb pasta of your choice
1/4 cup extra virgin olive oil
3 cloves garlic slice very thin
4 oz. white anchovies
2 cups tomatoes, chopped
salt and freshly ground pepper to taste
1/4 cup bread crumbs, browned in a skillet with 2 tablespoons extra virginolive oil
1/4 cup parsley, chopped

Cook the pasta according to package directions. Meanwhile, slowly heat the olive oil and garlic in a skillet. Do not allow the garlic to brown. When the garlic starts to get golden add the anchovies and saute over medium heat for about three minutes. Stir in the tomatoes and season with salt and pepper. Cook over high heat for seven to ten minutes, the anchovies should be in pieces. Add the toasted bread crumbs and parsley to the sauce. Toss the cooked, drained pasta to the sauce and mix well, serve hot.
