Caputo’s Summer Fruit Tiramisu

1/2 cup water
1/4 cup sugar
1 T limoncello or lemon juice
2 T pure vanilla extract
1/2 pint whipping cream, whipped very stiff
3 egg yolks
3 T sugar
1 lb. mascarpone cheese
1 1/2 – 7 oz. pkg. Italian lady fingers
1 pint blueberries, washed
1 pint strawberries, washed and sliced, save 2 for garnish
2 T powdered sugar

Combine water, 1/4 cup of sugar in a small saucepan and simmer until liquid is clear. Remove form heat to cool, add the limoncello. In a bowl combine egg yolks and 3 T of sugar, whip until lemon colored and thick, about 5 minutes. Whip mascarpone and 2 T. of the vanilla until smooth. Combine mascarpone, egg yolk mixture. Fold in the whipped cream and mix well. Next, dip one side of the lady fingers (horizontally) into the syrup and line side of bowl, next cover bottom with lady fingers, spoon in 1/3 of the cheese mixture. Spread the blueberries over cheese mixture, cover with more lady fingers. Repeat with 1/3 of the cheese and this time cover with the strawberries. Cover with remaining cheese and refrigerate for at least 2 hours. Garnish with sliced strawberries and powdered sugar.
