Caputo’s Tomato & Peach Salad


4 tomatoes, ripe but firm
4 peaches, nectarines or plums
¼ lb chevre or other soft goat cheese
extra virgin olive oil
fresh lemon juice
salt and fresh ground black pepper
¼ cup toasted pine nuts


Slice tomatoes to ¼ inch thickness. Cut peach, nectarine or plum along seam, remove pit and slice to the same thickness as the tomatoes. Arrange on platter alternating tomatoes and peaches, place dime size chuck of chevre on each seam, lightly drizzle with olive oil and lemon juice. Season with salt and pepper, sprinkle with pine nuts and serve at room temperature.
