Caputo’s Tyropitakia Borrowed From Ellen Furgis


1-8 oz. pkg. cream cheese
1 pint ricotta cheese
1 lb. feta cheese
1/2 cup parmesan cheese, grated
5 eggs
2 Tbl. Metaxa or other brandy, (optional)
1 lb. filo pastry
1 lb. butter, melted


Keep in mind when you work with filo pastry you must keep it covered with a slightly damp cloth when not being used. In a large bowl mix the first 6 ingredients well. Open up filo pastry and cut into 3 inch strips lengthwise. Brush a strip with butter and place 1 tsp. of the cheese mixture on the strip, centered 1 inch from the end. Fold one end over in a triangle and continue turning over the triangle until you reach the end of the filo. Like folding a flag. Place on baking sheet, brush top with butter, when sheet is full bake at 350 degrees for 20 to 25 minutes turning once. Remove from oven when golden brown.
