Chalupa


1 1/2 pounds pork loin
1 cup uncooked dried beans, pinto, white, red, kidney, or black
1-2 cloves garlic, minced
2 teaspoons chili powder
1 teaspoon cumin
1/2 onion, finely chopped
1 4 oz. can chopped green chilies
1/2 teaspoon oregano
1 teaspoon salt


Wash and sort beans. To help reduce gas, soak beans overnight. Drain soaking liquid.

Place all ingredients in large pan. Cover with water, bring to a boil, reduce heat to simmer and cook 4-6 hours or until fall apart tender. Break meat into bite size pieces. Serve with tortilla chips, chopped tomatoes, lettuce, grated cheese, chopped onion, salsa, etc.

This recipe may be cooked in a crock pot. Crock pot method of cooking will produce a lot of juice. It may be helpful to thicken the juice prior to serving.
