Cheesy Dutch Oven Potatoes

Olive oil (1/3-3/4 cup)
1 medium onion, chopped
10 pounds potatoes (approximately)
1-2 teaspoons season salt
1-2 teaspoons garlic salt or powder
1-2 teaspoons onion salt or powder
black pepper to taste
1-1 1/2 pounds grated cheese

Add enough oil to Dutch oven to coat the bottom of the pan.

Dice onion and add to Dutch oven. Wash and peel potatoes. Slice or dice enough potatoes to fill Dutch oven. Layer potatoes in pan with seasonings. Stir.

Cover and cook over medium hot coals, or in a 350 F oven for 30-40 minutes, stirring occasionally. Potatoes are done when they begin to brown on the edges of the pan and are tender.

Remove from heat, uncover and sprinkle with grated cheese. Allow cheese to melt, then serve and enjoy.
