Pier 49’s Chef Salad
1 c chopped romaine lettuce
½ green pepper thinly sliced
¼ red onion thinly sliced
3 mushrooms thinly sliced
3 black olives thinly sliced
½ tomato thinly sliced
10 slices of pepperoni
8 thin slices of ham
1/4c mozzarella cheese
1/4c mild cheddar cheese
Sprinkle fancy shredded parmesan
Place lettuce in a bowl, carefully place vegetables, meat and mozzarella and cheddar cheese in sections on top of the lettuce. Sprinkle the salad with fancy shredded parmesan cheese. Enjoy!
Pier 49’s Raspberry Vinaigrette
3T raspberry vinegar
1 shallot, quartered
1/8tsp ground black pepper
½ tsp salt
½ tsp Dijon mustard
1 tsp dried thyme
¾ c extra-virgin olive oil
Add the vinegar to a blender, replace the lid, turn the blender on, and through the feed opening, add, one at a time, shallot, black pepper, salt, mustard, and thyme. Then leaving the blender on, add the olive oil in a slow thin stream until well mixed.
