1/2 cup shortening
1 cup brown sugar, packed
1/2 cup pure maple syrup
1/2 teaspoon maple or vanilla flavoring
1-1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup coconut
1.) In mixing bowl, cream shortening and brown sugar until fluffy.
2.) Beat in egg, syrup, and flavoring until well mixed.
3.) In measure, combine flour, baking powder and salt. Add to creamed mixture.
4.) Stir in coconut.
5.) Drop by tablespoonsfuls 2 inches apart on sprayed cookie sheet.
6.) Bake at 375 degrees for 10-13 minutes.
