Chicken a la King


1 tablespoon butter
1/3 cup diced green bell pepper
1 can (4 oz.) sliced canned mushrooms, drained
1 can (10.75 oz) cond. cream chicken soup
1 1/4 cups 1 % milk
2 tablespoons chopped pimentos
2 cups cooked chopped chicken*
1/4 teaspoon Rotisserie chicken seasoning, optional
Salt and pepper to taste, optional
Serve over toast, mashed potatoes, Chinese noodles, patty shells, biscuits, rice or noodles


Melt butter in medium saucepan. Add diced bell pepper and drained canned mushrooms, sauté over medium heat until pepper is tender.

Whisk together soup and milk. Add to cooked peppers; stir in chopped pimentos, cooked chicken and seasoning to taste. Heat thoroughly. Serve over toast, mashed potatoes, noodles, patty shells or biscuits.

Notes:
* Try deli chicken, fast food chicken, left-over baked, boiled or grilled chicken.

For speed, buy chicken in bulk. Place in large stockpot; cover with water; add bouillon cubes (1 per cup water); onion salt to taste. Bring to a boil, cover, reduce heat to simmer and cook until chicken is cooked through. Remove chicken from stock; when cool enough to handle, cut into bite size pieces. Freeze chicken on large baking sheet; place 2 cups frozen chicken in each freezer bag; label, date and freeze for future use.

To calculate price comparisons: multiple the price per pound of boneless/skinless chicken by the appropriate factor.* For example: if the cost of boneless/skinless chicken is $2.47 and you wish to know if chicken drumsticks may be a less expensive buy; multiple $2.47 by .56, which equals $1.38. If the price of drumsticks is less than $1.38 per pound, drumsticks would be a less expensive purchase.
