Chicken Pesto Pizza

Cookbook Author Wendy Paul shares her recipe
for Chicken Pesto Pizza.
Authentic Pizza Crust
1 ¾ cups warm water
4 cups flour
1 tablespoon instant yeast
2 teaspoon salt

Mix water, salt, yeast in a large bowl. Blend in two cups of
flour and blend until incorporated. Add the other 2 cups of
flour a portion at a time. Mix dough until it becomes no
longer sticky. Clean bowl and grease with olive oil. Return
the dough into the bowl and allow dough to rise for about 1
hour or until doubled. Spread over pizza stone and top with
favorite toppings. Bake at 450 for 10-15 minutes until cheese
is golden and crust is done.
Chicken Pesto Pizza
1 recipe Authentic Pizza Crust
2 cups mozzarella cheese, grated
1 cup sliced olives
1 tomato, sliced thin
4 oz. Tomato Basil feta cheese
1 cup pesto sauce
1 cup chicken, cooked and shredded

Spread dough over entire pizza stone or baking sheet. Top
with pesto sauce, chicken, feta cheese, mozzarella cheese,
tomatoes and olives. Bake at 450 for 10-12 minutes until
crust is crispy and cheese is melted.
