1 pound chicken breast meat, cubed
1 cup sliced celery
1/2 cup chopped red onion
1/2 cup dried sweet cranberries
1/4 cup finely chopped walnuts
1 medium firm sweet/tart apple chopped in 1/4 -inch pieces
6 to 12 whole romaine lettuce leaves washed and dried
1/4 cup red wine vinegar
1/4 cup low fat or light mayonnaise
1 small clove garlic, minced or pressed
1 teaspoon Dijon mustard
1/8 teaspoon fresh ground black pepper
salt to taste
1. In a small bowl, blend all dressing ingredients together well using a wire whisk.
2. Combine all salad ingredients together in a large bowl. Pour dressing over ingredients and gently tossing everything together until blended. Cover salad and refrigerate at least 1 hour or until chilled.
3. Before serving toss salad ingredients together again and adjust seasoning if necessary with salt and additional fresh ground pepper
