Chicken Stuffed Manicotti
1/4 cup minced onion
1/4 cup minced mushrooms
1 tablespoon butter
1/4 pound ground pork
3/4 pound boneless skinless chicken breast, cooked and minced
3/4 cup cottage cheese
1/3 cup cream
1/2 teaspoon salt
1 (8-ounce) package manicotti
3 – 4 cups spaghetti sauce

Cook onion and mushrooms in butter until soft. Add ground pork and cook through, breaking into very small pieces. In a bowl, combine pork mixture and minced chicken, cottage cheese, cream, salt and pepper. Mix well. (or combine in a food processor and pulse a few times.) Place mixture in a quart freezer bag and seal. Cut off corner and squeeze filling into each uncooked manicotti shell. Cover bottom of baking dish or disposable foil baking pan with sauce. Arrange filled manicotti over sauce in dish or pan. Cover with extra heavy foil, label and freeze. Or bake now at 350 for 45 minutes. Uncover, top with cheese and bake 5 minutes longer.

To Serve: Thaw. Bake at 350 for 45 minutes. Top with shredded mozzarella cheese and bake 5 minutes longer.
