Chicken Taco Filling-by Karen Petersen, 365 Days of Slow Cooking

Same old crockpot, totally new meals! Go beyond soups and stews.
Put your slow cooker to work making a deliciously different dinner
every day.

Chicken Taco Filling
1 small onion, minced
1 1/2 T. chili powder
1 T. canola oil
2 garlic cloves, minced
1 t. ground coriander
1 t. cumin
1/2 C. salsa
1 t. sugar
8 oz. boneless, skinless chicken
thighs (thawed)
8 oz. boneless, skinless chicken
breasts (frozen)
2 tsp. lime juice
Salt and pepper to taste
Toppings: cheese, cilantro, and
Tomatoes

1. In a microwave-safe bowl, combine onion, chili powder, oil, garlic,
coriander, and cumin. Cook in microwave for about 3 minutes, stirring
every minute, until onion is tender. Pour into slow-cooker.

2. Stir in salsa and sugar.

3. Add the chicken; stir to coat.

4. Cover and cook on LOW for 4-6 hours.

5. Remove cover and shred chicken with two forks. Stir in the lime juice and
salt and pepper to taste.

6. Serve in tortillas with cheese, cilantro, and tomatoes.
