Chicken Tacos or Tostadas

Easy Best Ever Chicken Tacos or Tostadas
12 corn tortillas
Vegetable oil for frying, optional
2 cups shredded cooked chicken
1 ½ cups shredded cheddar or pepper jack cheese
2 cups shredded lettuce
2 tomatoes, chopped
12 eggs, cooked over easy, optional
Serve with Salsa and Guacamole

You can either heat tortillas in the microwave for aprox 30 seconds or until warmed through; wrap the stack in a slightly damp towel or paper towel. Or you can fry them; heat 3 Tbl of vegetable oil in large skillet over medium heat. The oil is ready when you drop a piece of bread into oil and it sizzles. Place in 2 or three tortillas, whatever will fit in your skillet to keep them in a single layer, cook for aprox 20 to 30 seconds, turn and cook and additional 20 or 30 seconds. You do not want to brown the tortillas. Remove from oil and set on plate lined with paper towels.

Regardless of if you warm or fry the tortillas the remaining directions are the same for both. Layer tortillas with chicken and cheese. For tacos: fold tortilla in half and set in baking dish. Bake at 350 for 5 or 10 minutes or until cheese is melted. A microwave can be used for this step. For taco salad: keep tortilla flat and continue to layer with salad options. Top with fried egg.

Serve both tacos and tostadas with salsa and guacamole! Makes 12.

Guacamole
5 ripe avocados
1 (8oz) pkg cream cheese
1-2 Tbl lime juice (to taste)
garlic salt and pepper to taste


Combine all ingredients and stir untill smooth. Makes about 2 cups.
Salsa
6 tomatoes, chopped
1 jalapeno, minced
1/4 cup minced red onion or shallot
1 cup cilantro, chopped
2 Tbl lime juice
salt, pepper, red pepper to taste


Combine all ingredients. Makes about 2 cups.
