Chili Verde

1 cup uncooked dried beans, (about 4 cups cooked or canned beans)
1 1/2 pounds pork chops, or pork steak
2 Tbl. oil
1 onion, chopped
3 cloves garlic, minced
1 pound tomatillos, (or 2 10 oz. cans)
1 tsp. salt
1/4 tsp. pepper, more or less to taste
1/2 tsp. cumin
2 cans (7 3/4 oz.) green chili

Wash beans, cover with cold water and soak 12-18 hours. Discard soaking liquid, cover with fresh water, add salt and cook until almost tender (soaking and discarding liquid will help reduce gas).

Cut meat into cubes. Brown meat in oil. Add chopped onion and minced garlic and saute. Add to cooking beans. Peel and dice tomatillos, add to pork mixture. Add pepper and cumin. Bring to a boil, reduce heat and simmer mixture until tomatillos, beans, and meat are tender. Add chiles. Serve hot with warm tortillas.
