Chocolate Potato Cake


1 cup milk
1 Tbl. Vinegar, or lemon juice
2 cups sugar, (try 1 1/3 cups)
1 cup shortening, (try 1/2 cup butter or margarine)
4 eggs
1 tsp. Vanilla
1 tsp. Food color, red, (optional)
1 cup mashed potatoes
2 cups flour
1 tsp. Baking soda
1/2 tsp salt
3 Tbl. Cocoa


Add vinegar or lemon juice to milk, set aside. Cream together sugar and shortening. Add eggs, vanilla, and food color – beat. Stir in milk and mashed potatoes. Add flour, soda, sa.t, and cocoa. Beat well. Pour batter in greased and floured 9×13 cake pan or a bundt pan. Bake at 350 degrees for 45 min. or until a tooth pick inserted in center comes out clean.

To serve, drizzle with chocolate sauce or frost with favorite frosting.
