Chorizo and Eggs


1/2 cup Mexican chorizo sausage (may be purchased at any supermarket)
5 eggs, beaten with a fork
1 tablespoon chopped fresh cilantro


Remove sausage from casing. Place sausage in a non-stick frying pan and
cook over medium heat for 3 to 4 minutes. Add eggs, stir, and cook
until desired doneness. Garnish with fresh cilantro.
