1 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar
1/2 cup molasses
2 eggs
1 orange peel, finely grated
1 cup candied orange peel, chopped
3 cups flour
2 teaspoons ground ginger
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 teaspoon baking soda
extra sugar for rolling cookies
Preheat oven to 350 F. Beat together butter, sugar and brown sugar until creamy. Add eggs and molasses; beat well. Stir in orange peel and chopped candied orange peel.
Combine flour, ginger, cinnamon, cloves, salt and baking soda. Stir to mix. Add to sugar and butter mixture; stir to mix. Cover and chill for 1-2 hours for easier handling.
Roll into walnut size balls then roll in extra sugar. Place on greased cookie sheet and partially flatten. Bake for 10-12 minutes or until done. Cool on cookie sheet for 1 minute before placing on cooling rack.
