Clam Chowder

Clam Chowder
4 T. Butter
2 Slices of bacon (chopped)
1 Onion (chopped)
3 T. Flour
4 c. Milk
2 c. Clam juice
3 Large potatoes (diced)
3 c. Clams (chopped)
½ t. Celery salt
½ t. Pepper
1 ½ c. Cream

Melt butter in large soup pot. Cook bacon and onion with butter until bacon is crisp and onion is browned. Add flour and cook, stirring, for 2 minutes. Add milk and clam juice and whisk till smooth and incorporated with flour mixture. Add potatoes, clams and garlic salt and pepper. Simmer about 15 minutes or until potatoes are tender. Stir in cream. Taste and adjust seasoning. Can be made a couple days ahead.
