1 cup short grain rice, (regular long grain will substitute)
1/2 cup seasoned rice vinegar, or apple cider vinegar
2 tablespoons sugar
1 teaspoon Dijon mustard
1 teaspoon dill weed
1 cup frozen peas, thawed
1/2 pound lean cooked ham, diced
1 red and yellow bell pepper, 1/2 each color (chopped)
1 bunch green onion, sliced
5 radishes, sliced
red leaf lettuce, (optional)
Cook rice according to package directions. Combine vinegar with sugar and stir to dissolve. (NOTE: If using apple cider vinegar use 1/3 cup sugar. Some sugar is already added to “seasoned” rice vinegar.) Add mustard and dill weed, stir. Sprinkle vinegar mixture over warm rice and fluff. More or less vinegar may be used according to taste.
Add diced ham, thawed peas, chopped bell pepper, sliced onion and radishes to rice and gently mix. Serve on lettuce leaf (red is pretty). Garnish with additional sliced green onions.
