Northern Lobster
Cook the lobster in salted boiling water for 7-8 minutes
or
Cook the lobster in salted boiling water for four minutes. Remove from the
water, cut in half length wise and broil for an additional four minutes. Two
minutes on each side.
West Coast Lobster
Remove the lobster tail from the body. Cut thet top of the lobster tail shell
lengthwise and remove the meat. Close the shell and place the meat on top of
the shell for cooking. Select one of the methods.
Place the shell and meat in the top of a double broiler, cover and steam for
6-7 minutes.
or
Place the shell and meat in pot of salted boiling water and cook for 6-7
minutes.
For broiled lobster tail, cut the lobster tail (with meat intact) lengthwise.
Place both pieces on the broiler rack and cook for three minutes on each side.
Serve with drawn butter.
