2 1-1/4 pound Maine Lobsters, steamed
1 cup rock crab meat
2 tablespoons butter
¼ cup onion, diced
½ cup bread crumbs
1/3 cup cream
¼ teaspoon dry mustard
¼ teaspoon cayenne pepper
pinch of salt
1 tablespoon parsley, chopped
1 tablespoon Parmesan cheese, grated
In a sauté pan, cook the onions in butter until soft. Add the crab and cream and cook for 30 seconds. Add the bread crumbs, mustard, cayenne, salt, and half of the parsley and cook for 2 minutes. Spoon into lobsters that have been split and cleaned. Top with the remaining parsley and a sprinkle of Parmesan cheese. Place under the broiler until brown.
