to
make Cranberry Glazed Brie.

Cranberry Glazed Brie
3 c. cranberries

⅓ c. dried currants

¾ c. packed brown sugar

⅓ c. water

⅛ t. dried mustard

⅛ t. allspice

⅛ t. ground cloves

⅛ t. ground ginger

⅛ t. ground cardamom

8″ wheel of Brie

Combine the cranberries, currants, brown sugar, water, dry mustard, allspice, cloves,
ginger and cardamom in a heavy nonaluminum saucepan. Cook over medium heat for 5
minutes or until most of the cranberries pop, stirring frequently. Cool to room
temperature. Chill in the refrigerator for up to 1 week at this point if desired.

Cut away the top rind of the cheese, leaving a 1″ border. Place on a foil-lined baking sheet.
Spread with the cranberry mixture. Chill covered, for 12 hours at this point if desired.
Bring to room temperature before baking.

Bake the cheese at 350 degrees for 12 minutes or until soft. Serve warm or at room
temperature with fruit slices and crackers.
